High up on her to do list was a week at The Kids Culinary Academy of Vermont in Highgate where she is whipping up some sophisticated dishes. "I wanted to come here because it's not baby cooking, it's like actual cooking," Bell said as she carefully sliced kiwi fruit. "Today we made pies and ganache. Later today I am making a cake." World flags are now positioned around the rural academy, originally founded in Burlington in 1996 by Chef Kelly Dietrich. His kid summer cooking camp on lower Main Street at his restaurant, Souza Brazilian Steakhouse, became so internationally popular that he needed to develop a residential program for their many repeat visitors. Dietrich's Highgate homestead is now home to anywhere between 50 to 150 young chefs who participate each summer, arriving from all over the world. "Our website has enabled us to take this camp to an international level," Dietrich said. "Parents plan their vacation destination just so their children can come to this camp." Chef Chris Smith of Huntington serves as Chef Kelly's media director, and camp counselor. His sons Brennan, 13, and Evan, 8, both attended camp this summer. Students are taught skills in, and out, of the kitchen. Evan Smith said when he tires of cooking in the kitchen there is plenty to do outside. "I like collecting the eggs best," he beamed beneath his floppy white chef's hat. (LYNN MONTY, Free Press) Groundskeeper Jacob Workman, 19, said the 60 to 70 chickens on the homestead lay about 75 to 125 eggs per day. He helps campers monitor the aquaponic system housed in a greenhouse there. Goldfish fuel the 100 percent self sustaining garden that produces juicy peppers and tomatoes. "I learned everything I know from Chef Kelly, he's a master gardener, and I am a quick learner," Workman said. "I work hard. That's why he keeps me around, and because the kids love me." Workman helped campers plant the expansive vegetable and flower gardens. Kids also feed the cows, goats, sheep, piglets, and turkeys. Evan hurried to the goats, shouting to one by name. "You keep calling him Nightmare, it's Midnight buddy," Workman corrected with a chuckle, following close behind the excited boy. Midnight, and his pals, Shadow, Snickers, and Gobbles like to escape their pen on a regular basis. So do the piglets. "Kids love wrangling them when they get loose," Workman laughed. Some kids opt to take a full day to do chores with Workman. "It makes me happy to know I'm doing something right, and these kids are loving it here," he said. Inside, student chefs prepare Coquille St. Jacques, a scallop dish, for the community at large. Different dishes are prepared and served by the young chefs each Wednesday evening. About 30 people arrive on average each week for the complimentary dinner, Smith said. Greyson Richards, 10, of Salt Lake City, Utah prepared ganache for the evening desert. "I love cooking," he said. "I have known that I am a chef for a couple years now. This week I have learned how to make garnishes and dinner rolls. This whole camp I just love. I hope to come back again." Alex Burke, 15, of Merit Island, Florida attended camp last year. He is serving the camp this summer as a junior counselor. He supervises the students to ensure they don't get into any trouble, he said. "I also do the dishes, make sure everything is clean in the kitchen, and I prep the food and do demos for the kids." Maliky Willford, 12, of Homassas, Florida said his favorite is Asian cooking. "When I grow up, I want to have something to fall back on, so this is a great career to have just in case." Chef Kelly awards many scholarships each summer. "Culinary arts has been really good to me and this is a way for me to give back, for kids in Vermont, and all over the country." Not always, but often enough. I'm always wearing a hole in the backs of my sneakers from my bumpy heels. Imperfection in my feet? Perhaps. But it really does create problems with rigid and inflexible shoes. These are not rigid at all. The heel contours to my foot and is stretchy. It's so easy to pull on and off and never leaves a mark. In short, they are fabulous! To be fair, I must tell you the one thing I don't like. If it's hot enough outside (and living in Florida, that's around 11 months of the year sadly enough) my feet sweat if I'm not wearing socks. The fabric is synthetic. However, I can simply wear some thin socks and the problem is solved and all is well with my kicks. (And if it's super hot, then I switch to my sandals!) The worst part is it's hard to find this model. However, look below for some that are super similar (and on my MUST have list) and will be sure to rock your comfort world. Did I happen to mention that a lot of these shoes can be tossed in the washing machine? I just did that with two pairs of mine (I think I have 6 Kalso Earth pairs so far) and they turned out great. Wouldn't recommend that with leather though. Just thought it worth mentioning. All the reviews are extremely positive. These are great walking shoes (and stylish too).
